You're so brave for trying these "faux" foods! Thing is, I only cook for one; freeze everything from hummus to tabbouleh to harissa; they come out fine, for one reason; garbage didn't go in, so garbage couldn't come out. Forget dehydrated, there is no reason, we cannot have high quality frozen food, whatever the cuisine.
I've bought a lot of frozen food over the last year; there's times when we just don't have the energy to cook and clean. Fact, in the course of complaining to producers about their foods about basic things like "is this a dessert? why are you using so much sugar?" Or, "you used chicken breast, and you didn't tenderize it? There's such a thing as chicken thighs." The result of these complaints has netted me about $200 in coupons for free food. That said, I don't see an improvement; I guess the market wants crap; excuse my English.
it's honestly amazing to me that so many of these have persisted through the years. who buys these? i am really curious about that part. if someone has never had pad thai, it seems unlikely they would go looking for it, especially in this format. and if you have had pad thai, you know what it tastes like and likely wouldn't buy these more than once.
i will admit though that i used to buy the thai kitchen soups (just add boiling water) a lot back in the day, especially the lemongrass one which i think i saw in the beginning of your video. i am not sure if those even have a true thai counterpart - to me they tasted not like much of anything, but they were cheap and an easy meal when i only had myself to feed, especially if i wasn't feeling well. i always added my own sauces. (i will take this time to note nong's khao man gai sauce can probably make an old shoe edible!) plus they didn't have quite the sodium bomb other instant ramen/noodle cups have.
I’ve been bringing pad Thai sauce and dry rice noodles when I travel long-term. I just couldn’t justify bringing a bottle of fish sauce, tamarind, etc to make the sauce from scratch. Somehow I didn’t think of bringing the instant version.

I love to cook but don’t think I would ever buy any any pre-made Pad Thai products! Just saying!
