Cooked just right and thinly sliced a pig ear can transform into a porcine noodle. Plate them on a bed of aromatic herbs like mint, shiso/perilla, lemongrass and others it becomes one of those dishes that changes people's way of thinking and eating this often overlooked piece of pork!
Hi! So pig ear is something you can use in laab. Take my laab moo recipe, and then sub some of the meat for thinly sliced ear (typically we use cooked pork skin) and it'll add nice texture!

Nam jim jaew is my favorite especially on a properly cooked ribeye.
How a grilled ribeye can be improved is beyond me.
