Most people know just a couple of Thai noodle dishes - pad thai, pad see ew, maybe drunken noodles. But there are many other noodle-y goodness that are unknown to most foreigners, but deserve the same amount of love!
This week, I’m sharing some of my favourite noodle dishes beyond pad thai and most of them are really easy to make at home!
Glass Noodle Pad Thai
Traditional pad thai is the one Thai noodle dish almost everyone is familiar with - but it’s not an easy dish to make for beginners. That’s where this Glass Noodle Pad Thai comes in! Glass noodles are so much easier to work with and it reheats better, and while the texture is a different, you still get the same classic pad thai flavours as the traditional version!
Pad Mama - Instant Ramen Noodle Stir Fry
Are you a fan of the humble instant ramen noodle? I think we all have a soft spot for them! In Thailand, our favourite brand is “Mama” noodles and that’s where this dish gets its name. This instant ramen stir fry is quick and easy and great for using up leftover vegetables and meat but… do not skip the eggs - they’re a huge part of Pad Mama’s flavour!
Pad Mee Sua - Vegan Noodle Stir Fry
Pad mee sua is a very popular vegan noodle dish - especially during the vegan eating festival in Thailand. It gets its name from the type of wheat based Chinese noodles used in the cooking process. This is my grandmother’s signature dish - she makes it for me every time I return home and it’s always a highlight of my trip - it’s just so satisfying!
Thai Duck Noodle Soup
Thai Duck Noodle Soup is a really popular Thai street food and it’s a great dish to make with an enriched homemade Thai style chicken stock. You’re going to add lots of aromatic spices and seasonings to the broth and braise the duck right in the stock. Once it’s layered over cooked noodles with a few extra bits and pieces it is pure, fragrant comfort food in a bowl.
Goong Ob Woonsen - Ginger Shrimp and Glass Noodles
Goong Ob Woonsen or ginger shrimp and glass noodles, is one of my favourite dishes to order in Thai seafood restaurants and it’s a classic in Thailand. The glass noodles and shrimp are cooked together with a marinade as well as lots of pepper, ginger and garlic. This noodle dish tastes just as good as it’s incredible aroma!
I made the Easier Healthier Pad Thai with Glass Noodles - I followed the recipe exactly - the sauce called for 4Tbls of Tamarind Paste which I purchased from a Thai grocer - my noodles came out deep black and tasted terrible and strongly of that paste - is 4Tbls correct ? I watched the video and your noodles turned out very light in color
