I consider Mee Krob to be your top dish, yet I haven’t made it because I’m not ready face the 500° hot oil for frying. It’s a little daunting. But this was always my favorite dish (gringo style, I’m sure - I always suspected it to be probably inauthentuc because Americans likrd it so much) when I lived in Los Angeles. They never served it as cubes but as a loose pile of noodles with a couple of jumbo shrimp on top. Even just reading your recipe brings back the memories.
