My first 2 new recipes for the year are complete opposites of each other, one is very healthy, and the other is indulgent. But considering the year(s) we’ve all had…a little indulgence is necessary at least once a month, don’t you think? In either case they both feel like a treat because they’re delicious!
🥦 My new go-to way to cook broccoli
If you’re getting tired of the same old veggie dishes, try this technique. A secret weapon adds so much depth and complexity to an otherwise simple broccoli (or sub another veggie) stir-fry. I’ve had many pleasantly-surprised reports on this recipe already!
🍨 Time for an old-school Thai indulgence.
This one hits my nostalgia button hard 😭. An authentic, pure coconut ice cream, served with sticky rice…in a bun! The sticky rice and buns are just an option (the same way the cone and sprinkles are an option here), but this is an old-school treat that’s hard to find nowadays.
If you’ve ever had store bought coconut ice cream, this is different. Many of those are trying to be a vegan version of regular ice cream, so they downplay the coconut flavour. Or they use a dairy base with added coconut flavours. My recipe uses only coconut milk, coconut water, and palm (coconut) sugar…basically the entire coconut tree! I want nothing but coconutty goodness to shine 🥥!
I was getting a little emotional eating it on camera because it brought back so many good memories of being a kid in southern Thailand, running after an ice cream cart that sold this very thing. I know it’s winter in Canada, but is there ever a bad time for ice cream?
Thai ice cream is so nostalgic for me! When I lived in Chiang Mai, I would see it being sold on the street. Seeing it in a bun instead of a cone was a bit perplexing ("they don't have cones?") but tasting the coconut milk... so nice.
