When it comes to cooking, oftentimes itâs the little things that make a big difference. In my latest video, the new and improved Cashew Chicken, I shared a few of these little things that might surprise you. This is the best cashew chicken Iâve made to date!
The trick Iâm most proud of for this recipe is re-roasting roasted cashews. Yes, those pre-roasted store bought cashews, roast them AGAIN. Get them darker, nuttier and crunchier.
This makes a difference because store-bought cashews can be surprisinglyâŠnot crunchy. Some brands are better than others, but ones I get from Costco are pretty âblonde,â and they can get lost amongst all the other textures in the stir fry. Once theyâre deep-roasted, the extra crunch and nuttiness make them pop!

The flavors and textures in this recipe are a home run and the dish is visually stunning. I thoroughly enjoyed this.I used the fried dry chillies. Leaving them in leftovers overnight jumped the heat level up to sweat beads on the forehead level bur still delicious.
