Recently I asked my husband to put away groceries and âfreeze all the protein.â Later I opened the freezer to find my tube of silken tofu hard as a rock. Well, he wasnât wrong cuz tofu IS protein, but unlike meat, frozen tofu doesnât just thaw back into smooth silky tofu. It turns into an entirely different animal (pun intended).
I knew that frozen tofu was a thing people do in parts of China and Japan, but had never done it myself because itâs not something Thai people do. So it was a good opportunity to explore a new cooking technique.
