Every January we all talk about resolutions, goals, fresh starts… and maybe even experience a spending hangover (the grocery store is an expensive place right now 😬).
So, this month I’m sharing some vegan and vegetarian favourites. They’re all really flavourful options perfect for adding more veggies and budget friendly protein sources to your diet this year! 🥕🥬
Here’s a few tips if you’re watching your grocery budget:
🎯 Look for great vegetable sales. Cauliflower can be pricey but often goes on sale at a rock bottom price. Cabbage and carrots are also really economical this time of year.
🎯 Don’t forget to use up leftovers like pressed tofu or bits and pieces of veggies that are close to their best before date! Toss them all in a stir fry or a vegan laab.
Vegan Laab
Vegan laab is a great way to use up any leftover pressed tofu - it crumbles so well and, with corn, makes a truly delicious, meat-free laab! Bonus: the tofu soaks up the laab dressing in a way meat can’t, so you get all that tasty sauce in every mouthful!
