Now, onto curries.
Last year when I conducted a blind taste test of different brands of red curry paste, I was shocked by how big the differences were between the best and the worst brands. I realized that…wow…the brand of your curry paste can really make or break the curry!
I finally understood why once in a while someone in the comments section will say that the curry they made had “no flavour.” Assuming that they actually followed the recipe (which may be a big assumption, lol) I now know why. They were using a brand of curry paste that was incredibly weak!
I thought the red curry paste test results would apply to other kinds of pastes (a wrong assumption as it turns out), but after many requests to do the same test for green curry, I decided it was worth doing to know for sure. This time I involved friends and family so it’s not just my own opinion, and the results did surprise me!

I have only ever regularly used Mae Ploy paste.
Aroy D is in a far second place, striking me as only salty, salty and hot, with no other qualities. Over the past few years, if there has been no Mae Ploy AND no Aroy D on store shelves, I stick to making Laab Gai, Tom Yum, and green papaya salad.
