If you work from home, what do your lunches look like? Perhaps they’re a mix of leftovers, takeout, sandwiches and other things that you “make” but don’t require actual “cooking” (instant noodles show up a lot for me!).
But what are some dishes you can make from scratch - that is prep, cook AND eat within your 45-min lunch break? My latest recipe, pad see ew with rice vermicelli, is one such dish, and I’ll prove it to you with this video that was filmed in (almost) real time so you can see it happen!
Pad see ew is a super popular stir-fried rice noodle dish that is incredibly fast to make due to its simple ingredient list and quick cooking time. Most people know pad see ew as the dish that uses fresh, wide rice noodles; such as in my original pad see ew recipe. But this vermicelli version, though not as popular, is much more “homecook”-friendly because the noodles are dry and can be kept in the pantry; so you can pull them out any time without having to plan ahead. It’s worth noting that this is the version of pad see ew I grew up eating in Southern Thailand!
For those who are meal-preppers…
Try lemongrass chicken with nuoc cham. You can marinade and cook a bunch off on the weekend. Having pre-cooked protein is so underrated, and makes a huge difference for quick meals. Because this chicken has a delicious-but-neutral-enough flavour, come weekdays you can do a number of things with it: simply put it on rice, top a salad, put it in a sandwich (even in grilled cheese), or chop it up and make a quick fried rice. You can also change it up with any number of the condiments or hot sauces that are sitting in your fridge door!
