The title of this email may sound like an exaggeration, but really, that’s the purpose, the raison d’être, of this sauce in Thai cuisine. It is designed to improve anything that feels like it “needs a little something.”
It’s called prik nam pla (though some call it nam pla prik) and it’s so simple, yet so powerful. One can almost say it has a cult following, but it’s not something you can buy. And even if you could…why would you, because it’s so easy to make and you likely already have these ingredients.

Prik nam pla is so important to Thai people that if I ask for it at a Thai restaurant in Canada, and they don't know what I’m talking about…MAJOR points are taken off this place in my books!
Why is it so effective? It’s because it’s salty, acidic, umami, and a little spicy. And when a dish feels flat, 99% of the time it’s because it’s missing these elements. This is why it can almost magically improve any and everything.
