For this newsletter I thought that I should highlight some appetizer recipes because summer is when we all love to get together and… EAT! But then again… so is winter. And spring. And also fall. 😂😂
But it’s summer right now - and there are still a few weekends left before it all comes crashing to a halt so, let’s make the most of it.
Appetizers are made for parties. The more portable they are the better because juggling plates and glasses while mingling and talking is a lot of multi-tasking. 😬
Plus, you get to try way more things when they’re tiny, cute and bite-sized, right?? So here are some really tasty Thai appetizers perfect for a summer crowd.
Corn Fritters - My Childhood Fave
My family made these Corn Fritters all the time growing up cuz they are so good - a perfect vegan appetizer for corn season. These are super crispy and very addictive. Serve them with store bought or homemade sriracha or sweet chili sauce for a crowd that likes it mild.
🎉Advance Prep Tip: You can make the batter in advance and fry these up close to serving time. If they go cold, you can reheat them in the oven, toaster oven or air fryer briefly to crisp them back up.
BBQ Pork Skewers - The Ultimate Street Food
Thai BBQ Pork Skewers, or Moo Ping, are a hugely popular street food and one of the best things I’ve ever had on a stick. They’re often enjoyed as breakfast with some sticky rice in Thailand, but they’re perfectly tasty without the rice. These are so flavourful you do not need a dipping sauce of any kind - makes it simpler for the host. 😉
🎉Advance Prep Tip: Marinade and skewer the pork the day before, and they will only take a few minutes on the grill!
Spicy Thai Shrimp Cakes
My recipe for spicy Thai Shrimp Cakes isn’t a traditional one. It combines the best of traditional Thai fish cakes with Thai shrimp cakes for a deliciously crunchy and zippy result. Warning: these will disappear very quickly at any get together!
🎉Advance Prep Tip: Fry them ahead of time and reheat them in the oven or air fryer to crisp up!
Crispy Spring Rolls
Is it even an Asian party without spring rolls? Is it any kind of party without spring rolls?? I could argue no on both counts 😂. I promise that these Crispy Spring Rolls will be better than anything you’ve ever had in a restaurant and you can make them ahead of time and freeze! Psst: there’s a vegetarian version too.
🎉Advance Prep Tip: Like the shrimp cakes above, fry them ahead of time and reheat in the oven or air fryer and they’ll be good as new.
Chicken Lettuce Wraps
Chicken Lettuce Wraps are so light, crunchy and refreshingly flavourful. Best of all they’re so easy!! Not just to make (which they are) but to serve to a crowd. Pre-portion them out into iceberg or endive cups or let your guests make their own. They’re also fine served at room temp - one less thing to worry about!
🎉Advance Prep Tip: Make the filling and prep the lettuce the day before and reheat the filling before serving.
