My momâs sister is known in our family for knowing all the famous places for food in Bangkok. âThis place has the best ___!â is a statement that accompanies every food item she brings us when she visits. And she always brings food when she visits.
And itâs true. She has yet to bring us something we donât love.
During my last trip, she brought a classic noodle soup with fish cakes or guay tiew look chin pla from, of course, a famous place. Itâs the most basic of all noodle soups, but also a classic. Iâd argue that this is the OG Thai noodle soup. The margherita pizza of pizzas.
Because of its simplicity, itâs also the easiest noodle soup you can make at home, and you can replace the fish cakes with other proteins, which I discuss in the recipe post. BUT there is a catch: you need to make your own Thai style stock. There are times when store bought stock is fine, and this is not one of them.
Thankfully making stock is easy, and it freezes well so youâll be glad to have it on hand. And because itâs the basic stock of Thai cuisine, I also have many recipes on the website that use pork stock, so youâll never run out of ideas.
