There are dishes that are popular in Thai restaurants, and there are dishes that are popular in Thai homes. This dish is the latter.
Growin up in Thailand, a soup called gaeng jued would show up on our dinner table every week. I’m sure many Thai families will tell you the same thing. I loved it, and everyone else did too.
Gaeng jued literally means “bland curry,” though it is anything but bland, nor is it a curry.
It's named that way to contrast other spicier Thai soups and curries, because it is not spicy at all. This is why it's so popular amongst families with kids (and elderly!), and now that I have my own kid, I make this dish almost every week. It is by far the most frequent menu item in my house right now!
Now, this doesn't mean that we have the exact same soup every week. This soup is endlessly modifiable, which is why we can have it week in week out without it being the same thing every time.
