I may "major" in Thai cooking, but when I started my career I was very much into baking and worked in bakeries. I ALMOST decided to go to pastry school instead of culinary school!
Today I still love to bake and consider myself quite good at it, so these are recipes worth sharing.
đ Most of them are also great for gift giving or adding to your holiday cookie platters. Package them up in some glassine or cellophane bags and seal them with cute holiday stickers or some festive ribbon.
Make sure you save a little of everything for yourself though because we all need a few holiday treats after shoveling snow, braving the mall, putting up the tree⊠you get the idea đ
âCanât Stopâ Candied Peanuts
These Coconut Sesame Candied Peanuts transport me right back to childhood. They were one of my all-time favourite snacks, and they were sold my school cafeteria as well as in markets. Incredibly addictive, and unlike any other candied nuts here.
As an adult, I wondered if they would be hard to make. Turns out, theyâre really easy. In fact, a viewer from Indonesia told me she used this recipe and started selling them for extra income!
Melt-In-Your-Mouth Coconut Mini Cookies
If youâve never had a tapioca cookie, you have to try them. These gluten-free Tapioca Coconut Mini Cookies, or Kanom Ping, have the most amazing texture that transforms as you chew on them! You can also colour them to give them a more festive look. Theyâre so cute and tiny that itâs really really hard to stop at just one (or 5!). They make a delicious, coconut-y holiday gift!
Singapore Cookies
If youâre a shortbread person, this is a must-try.
Despite being called Singapore Cookies in Thailand, these buttery sesame shortbread cookies topped with a cashew are not from Singapore. Maybe we got the name from a similar cashew cookie made in Singapore? Not sure about this one... However the name originated, these cookies make a scrumptious holiday treat and are another cookie perfect for gifting.
Cashew Mocha Toffee Cake
If I had to choose a favourite Thai bakery treat, this Mocha Toffee Cake would be in the top 2, right up against caramel custard cake. We just call it âtoffee cakeâ but essentially, itâs a soft, moist mocha cake topped with a buttery, caramel cashew crust thatâs justâŠinsanely good.
The traditional cake uses a light chiffon base, but Iâve modified the it to be a simple dump and stir cake that is much easier, and I also think holds up better to the topping.
My Best Chocolate Chip Cookies
Not Thai, but I canât NOT share this. Iâve made a lot of chocolate chip cookies in my lifetime but this Chocolate Chip Cookie recipe is far and away the best! I shared a couple of tricks that take these from good to amazing - including one step that might surprise you!
While they might not scream Christmas, these cookies are so good that theyâre absolutely worthy of gift-giving or adding to your Christmas cookie trays.
