In January I went to Las Vegas for the very first time. While I was there I visited Lotus of Siam, an iconic Thai restaurant of Las Vegas that people have been telling me about for years. Appropriately, I went there with friends from my Bangkok days and you can see some pics of our meal below!
It was a great trip, but as soon as I landed in Vancouver I got the sickness! 🤧 And this one is taking its sweet time to leave me.
So I’ve been thinking about and eating soup. Lots of soup. And that’s what I’m sharing with you this week in case you’ve also caught something, or maybe you’re just cold. 🥶
So here we go… all the soups, the noodles, the wontons, the chicken and comfort food you need! 🍲
Thai Chicken Noodle Soup
Can we even talk about cold remedies without talking about chicken noodle soup? I feel like every cuisine has their version. Thai Chicken Noodle Soup is a street food and one of the easiest noodle soups you can make at home. If you want it to taste like in Thailand, you have to use my Thai-style chicken stock as your base. But if you want it quick, store bought unsalted stock will do in a pinch.
Thai Oxtail Soup (soup haang wua)
There are two versions of Thai Oxtail Soup: a Thai-Muslim one which you’ll often find in Muslim-owned restaurants in Thailand, and then there’s this “Thai-Thai” one which is simpler to make. This is a recipe for a cozy weekend because oxtail needs a few hours to cook, but all that time makes the most luxurious beef broth that will be well worth the time.
Tom Yum Noodle Soup (guay tiew tom yum)
If you ever visit Thailand, do yourself a favour and order Tom Yum Noodle Soup from a noodle shop. It’s SO worth it. This is not the same as the more well known Tom Yum Soup, but it has the same spicy and sour flavour profile, and it’s very easy to make at home!
Wonton Soup (giew nam)
Ok, Wonton Soup is not exactly something you’d associate with Thai cuisine, but there is a lot of Chinese influence in Thailand and in Thai cooking so this is a dish we eat often. If you’re a little intimidated when it comes to making wontons from scratch, it’s really not that hard! Thai Glass Noodle Soup (gaeng jued)
This is the one dish that I make ALL the time. Honestly, it’s a staple in our house and in the homes of most Thai families, and it’s extremely comforting and satisfying. Gaeng jued is one of the few non-spicy Thai soups - which makes it ideal if you have kids. You can put a variety of things in it as the main thing really is the broth, but this Glass Noodle version is one of the most popular.
