Sawaddee ka! šš¼
Todayā¦ today is a big day. Why? Because itās Pai Day! Ok, technically itās Pi Day buuuut, when your new book is released coincidentally on March 14th and your name is Paiā¦ well that officially makes today Pai Day! š¤£
Today is the day SABAI: 100 Simple Thai Recipes For Any Day of the Week hits store shelves and Iām so excited to finally see it out in the world. And Iāll tell you whatā¦ the recipes in this book are a lot easier than trying to remember the first 20 digits in Pi - another reason to make today Pai day! š
SABAI (and you can learn more about it and order you copy here) focuses on simple, straightforward Thai dishes you can make on busy weeknights. So I thought today Iād share some of my favourite quick and easy recipes to get you started!
PS: A huge thank you to all of you who pre-ordered the book - I hope you love it!
Pad See Ew with Rice Vermicelli
Pad See Ew is a salty sweet noodle dish most people associate with fresh, wide noodles. But this is the version I grew up eating - and it takes 20 minutes to make from start to finish. ā° Thatās faster than take out! Bonus? Kids love it - my son loves this dish!
The video contains the vegetarian version but in the written recipe I give you tips on adding meat and choosing the right noodles!
Thai Chicken Fried Rice
Fried rice is such a satisfying dish for me and this super flavourful Thai Chicken Fried Rice recipe follows a very simple, standard Thai fried rice formula that you can whip up quickly any time. I made this with kale but you can sub whatever veg you have on hand - or skip the veggies entirely.
Panang Curry Beef
Panang Curry is a much loved Thai curry dish with its thick, luscious sauce and you can make if faaaaast! Perfect for busy nights. Canāt find panang curry paste at the store and donāt want to make it from scratch? No worries! In this recipe I show you a ācheatā for making panang curry paste using store bought red curry paste as a base!
Hot Thai Tuna - Red Curry Stir Fried Tuna
Got a can of tuna in the cupboard and 30 minutes? Then put Hot Thai Tuna on the menu! Itās absolutely bursting with Thai flavours: red curry, lemongrass, makrut lime leaves and fish sauce or shrimp paste. Serve it with plain jasmine rice, congee (my fave), scrambled eggs or even use it as filling for an omelette or quesadillas.
Chinese Egg and Tomato Stir Fry
This is a five minute dish. I kid you not. Whatās important with Chinese Egg and Tomato Stir Fry is the quality of your ingredients - especially the tomatoes - because they really are the star of the show. Itās a great recipe to have in your pocket if youāre overwhelmed with backyard tomatoes in summer!
