Not exactly unexpected in summer, is it? But we did just break the record of global average temperature a few days ago and summer has only just begun. 🥵
So, if you’re like me, turning on the oven or eating steaming bowls of noodle soup is probably not high on your priority list right now. Better a Thai iced tea or a coconut ice cream on a shady patio!
So here are some Thai recipes made for summer: served room temp, minimal prep, but with bold flavours. Because even though I may not want to cook, I still want to eat!

Epic Thai Red Curry Tacos
These Thai Tacos started out as a challenge to make a Thai flavoured dish without shopping at an Asian grocery store. The results… were kind of epic! This is one of the best things I’ve ever made on the YouTube channel - no lie! Make the components when it’s cool and assemble them when it’s time to eat - just like any taco night at home.
Spicy Thai Egg Salad (Yum Kai Tom)
If you can boil some eggs and chop up some ingredients, you can make this incredible spicy Thai egg salad. There’s no mayo involved - we’re going use fish sauce instead! The result is bright, light and refreshing. Perfect for a hot day!
Spicy Garlic Lime Pork (Moo Manao)
Moo manao, or spicy garlic lime pork, is sooo easy to make and requires 15 (that’s right, fifteen) seconds of cooking. The zippy dressing, the crunchy veg and juicy pork encapsulate all the iconic Thai flavours: spicy, sour, sweet and salty. It’s so good!
Spicy Salmon Salad (Laab Salmon)
Spicy Salmon Salad, or Laab Salmon, is a beauty if you’re entertaining. It looks so impressive. The idea came to me after eating salmon sashimi and thinking it would be so good if I “laab it”. And it is. Just like sashimi, it’s light and refreshing but, it’s also spicy and full of herby goodness!
Pomelo Salad (Yum Som-O)
Citrus is such a great feature ingredient to liven up summer dishes. Pomelo Salad, or Yum Som-O, is exactly what you’d expect of a citrus based salad: lively and light and so tasty with all the Thai flavours you’d expect to find. Look for pomelo at Asian grocery stores, or substitute grapefruit segments.
