There are sooo many types of noodle soups in Thailand, but if I had to pick only one noodle soup to eat for the rest of my life…it would be, without question, boat noodles or guay tiew ruea.
With no disrespect to pho, boat noodles has been described to me as “pho on steroids.” Instead of being a comforting bowl of soup that pho is, boat noodles will get your adrenaline going with the strong flavours, the zing, the richness, and the spices. That’s why they come in small bowls. 😄
Another reason they come in small bowls is that they were originally sold on boats, as you might have guessed! And a large bowl of hot soup on a wobbly boat is just not practical. The strong and rich broth also means you don’t need a lot of broth in the bowl, also practical when on a boat.
The magic ingredient in boat noodle’s is something many do not realize when they first try it, but as a YouTube commenter said:
I think if I’d known about the [secret ingredient] before I first tried it, I would have been too squeamish. After I’d tried it I didn’t care GIMME GIMME GIMME
And no, I won’t tell you what it is because I don’t want to spoil the video for you 😉.
