It's mango season! And in my mind, that’s the most joyful time of year. This is when we gorge ourselves on all the sweet, juicy, drippy fruit we can get our hands on and I make ALL the mango things. Like… ALL of them. 🥭
The start of mango season also happens to coincide with Thai New Year - or Songkran - which runs from April 13-15. Food is always part of the celebrations and nobody can resist a bowl of mango sticky rice. 😁
So, in the spirit of making all the mango things… let’s get to it! Here’s 5 of my favorite mango recipes that you must make this time of year - including, of course, Mango Sticky Rice!
Mango Coconut Jelly Cubes
There’s a reason this Mango Coconut Jelly Cube recipe has over 3 million views on YouTube - they’re so refreshing and so easy to make! And, because we use agar agar instead of gelatin, they’re also a perfect vegan mango treat!
Mango Sticky Rice
If there’s a quintessential Thai dessert it has to be Mango Sticky Rice. While the dish has three components (coconut sticky rice, salted coconut sauce and the mango topping) they’re all very simple to prepare! This is a must make for mango season.
Mango Royale
Mango Royale (aka Mango Float) is actually a frozen Filipino dessert. With only 5 ingredients and no baking, it’s an amazing warm weather dessert and a pretty foolproof way to enjoy mango season.
Hong Kong Mango Pancake
As much as I enjoy the mango crepes you get at dim sum, I always felt they could be more… well… mango-ey. So with this recipe I take them up a notch by adding a really lush mango sauce that gives the whole dish an explosion of mango flavor and helps lower food waste! Win-win!
Yum Pla Duk Foo - Crispy Fish with Green Mango Salad
