When it comes to Mother's Day meal ideas, I really have no idea what qualifies as a Mother's Day-appropriate meal 🤣.
So this year I'm going with "popular classics" that are straightforward to make - and therefore, less likely to go wrong - because you really don't want to mess up this special meal for mom! 😬
And if Mother’s Day is not your thing, I get that. Why not put together one of these Thai classics and treat yourself instead?
Green Curry
Green Curry is one of the most popular Thai dishes both in, and out, of Thailand and you really can’t go wrong with it - especially if you follow my tutorial! Make it with mom’s favourite protein. I even have a totally vegan version you can try.
Tom Kha Gai (Thai Coconut Chicken Soup)
Tom Kha Gai - or Thai Coconut Chicken Soup - is the dish I recommend as a gateway dish to Thai cooking. It’s so easy, so popular and… it’s chicken soup - you know it’s going to be comforting and homey. Just like mom. ☺️
Cashew Chicken
Skip takeout and make Cashew Chicken at home for mom! She’ll appreciate the effort and, I’ve created the ultimate guide to make this in your own kitchen. The results will be soooo much better than takeout! (This is for the Thai version of Cashew Chicken which is different from the Chinese version).
Red Curry Chicken & Squash
I don’t know if it’s just me, but all of the women in my life really love creamy squashes. (The men, not as much.) So if your mom loves squashes, this is the one for her. The key, is the red curry paste - make sure you use a good one, and yes, there are bad ones. Coconut Water Jelly Cubes
These adorable little Coconut Water Jelly Cubes are the perfect dessert to end a special meal for mom. With only 4 ingredients, they’re super easy to make. The suspended fruits make the cubes look so pretty and colourful. (Oh, and they’re also vegan and gluten-free!)
