It took me 14 years of making YouTube videos before making one of the most popular dishes in Thai restaurants around the world, chicken satay. Why not?
Well, it’s because of principle. You see, the reason I started HTK was because I wanted to share real Thai food, the way we have it in Thailand. And in Thailand, we don’t do chicken satay.
99% of the satay Thai people eat is made from pork. Sure, you might see chicken satay in touristy spots or muslim communities, but it’s few and far between and I’d never seen chicken satay until I came to Canada. So my principles told me: nope, I won’t give you a chicken satay recipe, not me.
But as I evolved as a teacher, I realized there is something else I also have to do: make people feel that Thai food is very doable. That it isn’t any more complicated than anything else they cook.
Enters chicken satay. It is undeniable that chicken is the most popular meat here. Unlike beef or pork, there are only a few cuts, everyone knows what to do with them, and it’s affordable. So when people are looking to make satay, I can promise you they are not searching for pork satay on the internet.
I realized that chicken satay, even though it’s not really a thing in Thailand, can serve as a gateway drug. If this is what people are looking for, let me give you my version, and while you’re here let me tell you about the real satay we eat in Thailand.
So I first wrote it into my book, Sabai, and now I’ve also made a video tutorial, because this is one recipe that does benefit from a visual aid.
