Sawaddee Ka!
Earlier in my career I sometimes found myself struggling between whether I should share the “traditional” version of a dish, or a modification that I prefer. I felt the responsibility of being a good “ambassador” of Thai cuisine; but on the other hand I also believed “more delicious is better”!
As I’ve grown in confidence, I’m more comfortable making changes because I realize that no dish is static. Most dishes didn’t start out exactly as they are now. ALL cuisines evolve, and everyone has a right to participate in that evolution…hopefully for the better. For more “deliciousness”.
The latest recipe is a drastic modification, and one that would go very well with leftover turkey!
There’s a pasta dish in Thailand called “dried chilies spaghetti” that SOUNDED good given the ingredients…but to me always failed to deliver. So I decided to take those ingredients and rework them into something incredible. You can read more about the original dish and how I changed it in the blog post.
A Patreon member said that this would go very well with his leftover Thanksgiving turkey, and he is absolutely right! I’ve had it with mackerel, sausages, and chicken; all were fantastic.
