Sawaddee ka 🙏🏼
I’ve had many bowls of pho since moving to Canada and always thought, “It’s good, but Thai noodle soups are better.” (Not biased at all, of course. 😉) It’s hard to find Thai noodle soups here, but pho has been “close enough” to satisfy my cravings.
THEN I had Aunty Jacqueline’s pho and finally realized how good pho can be. Aunty J. is my mother-in-law’s best friend, and the two of them grew up together in Vietnam. (They were Chinese immigrants to Vietnam.)
Here’s the photo of the original bowl of pho that changed the way I think of pho forever:
I then found out that pho is her signature dish, and that she’s been making for decades. But…she’s the only one who knows how to make it!!
This made me a little nervous. I wanted to make sure this treasure of a recipe doesn’t get lost, and asked if she would let me have the recipe…and maybe even put it on my YouTube channel.
To my surprise, she was delighted! Unbeknownst to me she’s a fan of the show, and she was excited to have her recipe featured!
Auntie Jacqueline’s “Legendary” Oxtail Pho
Here’s another surprise - she actually had the recipe written down, with amounts! A shocker for anyone who’s ever tried to get “grandma’s recipes.” It barely had any details though, so it took a few phone calls to clarify some things.
In the end I made it pretty much as prescribed except for scaling it down slightly because my pot isn’t as big as hers!
So I’m beyond thrilled to share this with you. I hope you will enjoy it and treasure it as much as I have!
